Birthday Week: Chocolate Coconut Cupcakes



Today marks the beginning of my birthday week! Although I love all baked goods, cupcakes aren't my favorite but I do love making them, particularly during my birthday week! 
(I told you I love birthdays)
So, this week, I'm going to have some extra fun/different posts in celebration! 
Let's kick it off with this delicious cupcake recipe, shall we?

Cupcake:
-3/4 cup cocoa powder
-2 1/2 cups brown sugar
-2 cups flour
-2/3 cup canola/vegetable oil
-3 large eggs
-2 teaspoons baking powder
-2 teaspoons baking soda
-1/2 teaspoon salt
-1 1/2 teaspoons vanilla
-1/2 teaspoon coconut extract
-1 cup buttermilk

Frosting: 
-1 cup butter
-8 oz cream cheese
-6 cups powdered sugar
-1 teaspoon vanilla
-1/2 teaspoon coconut extract
-11/2 cups coconut flakes for topping

Preheat oven to 350. 
For the cupcakes: In a large bowl, add all dry ingredients. Pour in all liquid ingredients and mix until well combined. Fill cupcake baking cups 2/3 of the way full. Bake for 15-20 minutes or until toothpick inserted in center of cupcake comes out clean. 
Let cool.
For frosting: Beat butter and cream cheese at medium speed until smooth. Slowly add powdered sugar in batches and beat until smooth. Add vanilla and coconut extract. Mix well. 
Frost cupcakes and top with coconut.
